Once they've stood for a few weeks the stalks are threshed to get the seeds.

And a very time-consuming process it is. A blanket is laid on the ground and then the stalks are bashed on it until all the seeds are shaken out. At the end of the day there is a small heap of seeds; not much to show for a days work, but the hummus would be duller without them.

Continuing the theme of what you find in Turkish fields what are these on a mountain plateau above Kalkan? My apologies for the poor quality of the picture it is pre-digital and post-film developing by Kalkan Inkompetent Foto Fiends. If it is too indistinct they are little huts on top of stilts - and padlocked. [Perhaps KKOB would care to give a few other people a chance to have a go before he wades in with the right answer.]
