most times when i eat steak out in a restaurant it is always so soft and tender
they must do something to the steak,ie soak it in something to make it this soft, does anyone know? my partner keeps meaning to ask his chef and forgets

I know of a couple of restaurants where they marinade the steak in milk for a couple of hours before cooking. It doesn't colour the meat or impart any flavour but it certainly has a tenderising effect.

I think they buy that steak that's gone a funny colour and beat it with a mallet.

thanks kkob it must be something like that because there is no flavour and the steak is usually a bit paler hhmm do i risk trying that tomorrow
(i watched come dine with me tonight so i have plans ha)

You can also add some bicarb to the milk but be aware that it'll give the meat a slightly salty taste.

For years I cooked steak slowly and not too hot, and I always thought it tougher than restaurants, seems far better cooked very hot for a shorter time,simple but seems to work,decent meat obviously makes a big difference.
