Taking a decent photograph

Still getting used to new camera FinePix S5600. Don't necessarily want to faff about with all different settings (don't understand them - basically cause I'm thick) - just want to point an poke.

As example the two photos below - one is alot "darker" than the other - why [?]. Neither is as "bright" as it was in real life - why[?].

Apologies if these are simplistic questions for the aficionados
