You need to be careful about who you ask Lance. Saltpeter is one of the main ingredients for making gunpowder and you might just attract the attention of the Jandarma.

Is it for culinary purposes or for the garden ?

If it's for food preservation ask for Sodium Nitrate ( or Nitrite) or E252.

For the garden, any one of a number of high nitrogen foods will be what you need.

Saltpeter is used by butchers in Scotland to prepare beef for beefham - delicious.  Cut thin and with a generous coating of mixed spice.  Oh the memories.
