my family are looking to travel to olu deniz in june bearing in mind this is ramadan will it affect our holiday

Not at all.  Things go on as normal in the tourist areas

There may be a few of the small lokantas in Fethiye that are closed for the duration. Oh & don't plan to hire a car & drive it towards sundown, it can become a bit like wacky races with peeps rushing home to break their fast    ;)

Otherwise, I don't think you would witness anything that would give you any idea that Ramazan, as it's known in Turkey, is happening.

isomeone else is in charge of booking what about the end of ramadan 16th i have been told eid

Ramadan officially finishes on the evening of Thursday 14th. This is followed by Eid al-Fitr, the Bayram Holiday. You're only likely to notice that banks, post offices and government offices will be closed for the first couple of days of the following week so it may be worthwhile having a little more cash available than normal. Other than that, it'll be business as usual in the holiday trade.
