Branston Pickle
« on: November 22, 2016, 13:40:33 PM »
I am going to make some Branston Pickle, the recipes I have found all need a turnip, has anyone made this and what did they substitute for a turnip.    I think  the brown thing which I presume is some sort of radish would be too bitter and I wondered about using the white radish type with the pink middle.

Any root (or simply firm?) veg with a similar texture could be substituted, although steer clear of anything with a strong flavour - bear in mind that the spice mix and pickling process masks the flavours of the individual ingredients to a certain extent.  They end up almost there for texture rather than flavour.  I know parsnips are often substituted for turnip/swede but you'll have the same issue getting a hold of them locally I suspect.

I seem to remember there was a guy who used to grow and sell a lot of root veg somewhere up near Nif(?), is he still on the go?

Yep. His last batch of moonshine wasn't quite up to the mark.  ;)
