Quite right mine was the same served in a clay dish sizzling hot not necessary for some foods it just over cooks the meal and draws all the fat out ,its all show nowadays ,i had some calamari served the same way it was so over cooked you had to swallow it to tough to chew, 3/4 Min's would have been fine not the  time they leave it in the dishes ,if they have to us these dishes serve it on to the plate straight away so it wont carry on cooking ,i dont know who is at fault the owners or the  so called chefs,we were in a very busy hotel on the prom food quite good  wanted chicken in spicy barbecue sauce home made so they said went out the back to go to the loo glanced in the kitchen one big jar of spicy barbecue sauce . ;)
