I know it's not PC to eat veal in the UK but I love it. It's gradually making a comeback now that there are more farmers raising the calves in a more humane way before slaughter.

Yes, calves that under normal circumstances were despatched pretty quickly as soon as they were born - not much use for male calves in dairy herds.

Now veal is acceptable, roll on suckling pigs and milk fed lambs being available!

Oh yes !

I've recently managed to find a source of unbleached sheeps intestines. Just right for Kokorec !  :)
