What is more traditional at Christmas than a spot of panic? How's yours doing?

My younger daughter is cooking in her own place for the first time - well she is 36 so it is about time! She bought a nice fresh turkey for her family. Then we got the panic text. A single word.   "Giblets!"  . A few minutes later a rather calmer text arrived "What do I do with giblets?". Having had it explained to her I hope she has now got them like my goose giblets - on the stove with carrots, onions, celery and fresh herbs making a lovely stock.

You rarely get giblets with fowl from shops these days. Using them to make stock is always so much better than stock cubes or granules.

          I think it's a fowl practice           I'll be having a White Christmas, and if they run out i'll start on the reds.     ;)

We're in the same boat Colwyn. After 20 years of us doing all the hard graft, our daughter has decided to take over the reins this year. We can now have a relaxing day eating and drinking and no bloody washing up.
