Before a meal in restaurants you normally get bread and a dish of red paste .What is it called.

Do you mean the chilli dip? If so, this is called Antep ezme. Normally served with some yoghurt too.

I always take a couple of tubs back with me. I love it! Did notice in May that a lot of restaurants are giving you sliced bread as opposed to puffy bread now. Only got puffy stuff in George's. Is this a new trend, or was I just too early in the season?

Don't see any slices of free melon after the meal like we used too either. Fethiye and Calis restaurants included.
