Assuming people don't really start to eat evening dinner till 6pm at the earliest, and most won't take orders after 10pm, that would mean each sitting would have to last less than 27 minutes   ;)

6pm - 10pm = 4 hours = 240 minutes divided by 3 changes = 80 minutes.

Also depends on the Nationality.  We have a Turkish friend and her husband who we met for breakfast on the Kordon.  We met at the Restaurant at 10.30am and were still there at 4.30pm.  We also met at the Yacht Classic at 8.00pm and left at 12.00pm, after the staff started to clear all the other tables (and still went on for drinks).   I have noted that Turkish people who eat out do spend a long time at their tables.  Not like us Brits...

Lets face it, not only is your maths slightly dodge, your knowledge of how restaurants operate is a bit wide of the mark - mibbe you should just give it up as a rant gone wrong...

May I ask what you did for 6 hours - presumably the breakfast didn't take that long.
