Go into any supermarket and you can buy packets of the flatbread. It's called Lavas (pronounced Lavash)

I suspect there's 2 different types of bread being discussed here...

Yes, there are 2 different kinds. The "balloon" bread baked and served at restaurants and also the flat bread used for wraps are both called Lavas,

I also love the 'puffy bread', so does anyone know where to buy it so I can bake it at home?

I have a Turkish recipe book that contains a recipe for
Flat Bread. It's too big to reproduce on here so send me a email via my profile and I'll send you a copy

What's the name for the bread (sometimes referred to as Village Bread) that is about 8"round and only about 2" high.  Engin used to serve it at Istanbul in Kaya and the place at Kirk Pinar also serve it and it is SO good.

Incidentally the shop next to Bim in Fethiye, called Anadolu, do it.  Anadolu is over the road from Goksular, going toward Migros.
