Go to one of the butchers in Fethiye and ask for Dana Yag (pronounced Yaa). They'll sell you beef fat. Take it home and either fry it very gently, bake in an oven on a medium heat, or boil it in water. The oil that you pour off of the first two methods will solidify as lard. If you choose to boil it, allow it to cool, and the lard will solidify in a layer above the water.

If you freeze the lard, it'll keep for several months.
