Title: Moist Apple Cake

8oz Plain Flour
1/2 tsp Salt
1/2 tsp Bicarb
4oz Marg or Butter (I use buttter)
8oz Castor Sugar (or granulated)
2 medium apples (I lke it best when they are a bit sharp)  Peeled (if you want) and diced
2oz Walnuts
2oz Rasins or Sultanas (I use Sultanas)
2 Eggs
1 tsp vanilla essence

Sift flour, salt & Bicarb.

Rub in fat till fine breadcrumbs.

Stir in vanilla essence, sugar, apple, walnuts, fruit, and egg.

Add no other fluid, the juice from the apple adds moisture.  It'll be a lumpy, fairly dry mix.

Bake for 1 1/2 hrs at 170c  (which MAY be about Mk6)

OR, don't use the walnuts and use some almond essence, it's lovely.....[^]

It IS quick and easy, AND delicious.  It has to be easy for me.  I am lousy at cakes.  Good at eating them though  ;)

I buy something sharp like Granny Smith.  I am not sure if I have ever tried cooking apples.  But theres a lot od sugar in the cake, so the apple needs to have some go behind it.  Its a very easy cake and always turns out well.  Just don't panic when you mix it before putting it in the tin, it IS a dryish mix which gets its moisture from the fruit and possibly the sugar melting.

LOL!   Moe, don't ask me how it should turn out.  My cakes are doomed to go hard ROFL!

BUT, this cake comes out moist and er,sort of not firm, but definitely not light.  To put it another way, you need to cook it and see for yourself to see.  All I know is its the one cake I make that I know wont last long enough to become hard.

BB, I tell you what, I will make you one (when I get some apples) then we can meet and all I ask is I can have one piece (as I am trying to lose weight "Mother of the Groom" coming up & nowhere to hide in the photos).   :-\

Hi Mark, was it you I met?  How you feeling?  The dreaded cake curse hasn't hit yet???  LOL.

Glad you like it.  It's an easy cake, just remember not to add any extra fluid (even if the mix seems very dry).

It was me the cake was very nice no curse yet. I am going to ask my Turkish teacher what is Turkish for Almond essence.

Almond is Badem, but I am not sure Almond Essence can be got here (beware, you might get sold Almond oil).  I bought some in the UK, -cant you ask a kind soul to bring you one out.  After all, its a tiny bottle.  But, the original recipe has walnuts in and vanilla essence, if you fancy a variation.

Here you can get small packets called Seker Vanillin, I think for Vanilla essence,its quite strong.

In Migros you can get sachets of Bicarb and also packets  of Hamur Kabrtma Tozu (which I suspect is a Bicarb and Baking powder mix) I use this normally, I don't know if it's better than bicarb alone.  One packet makes two cakes.

Wow this recipe looks easy and I bet it is lovely I am going to try it and will let you know how I get on. Thanks for the recipe I am always keen to try tasty but easy recipies.

Heather, it is both those things, so it suits me down to the ground.  Someone gave me the recipe at a Tupperware party way back in the '80's and I have baked it a lot.
