Title: get stuffed !

has anyone seen dried sage anywhere i think its turkish name is ada cayi
i wanted to try and make my own stuffing

Friday market, there's loads there, some of the mini markets have it, it's normaly stored near the tea ;)

Ditto - tons of it on the markets, the locals make a 'tea' with it. Small leaves but be warned its very strong too and can overpower the stuffing if you use too much.

Sisters place in the fruit and veg section, next to the Fish Market in Fethiye has lots of herbs and spices. Excellent selection, though have no idea what you would do with some of them!

thanks for the replies i never would have looked by the tea. if anyone has a tried and tested recipe i would be very grateful

Here you go.....

Sage and Onion Stuffing
Ingredients
2 onions
tbl spoon dried sage
1 small stale Turkish loaf made into breadcrumbs
1 tbl spoon butter (optional)
salt and pepper to taste
1 egg

Method

1. Peel the onions; finely chop put them into a little boiling water with the sage, simmer for 5 minutes.
2. Drain and place in food processor with butter breadcrumbs, egg and seasoning or alternatively mix by hand.
3. Blend or mix into a heavy paste (if to dry add a little water).
4. If you are using this to stuff meat or poultry then it is now ready for use. Alternatively roll into suitable size balls and place in a suitable greased baking tin and cook in the oven (175c) for about 20 minutes until slightly brown on top.

thanks philrose for your reply,cant wait to try it out,might just have to do a roast 2mora now,if it works out for me you will be my hero,english supply has now ended so hence gonna give it a go myself.x

Another way to do the bread crumbs is - leave a fresh loaf for a day then cut off all outer brown layer then blitz in food processor then, toast in oven for a few mins to dry out the crumbs.

Ha Ha your so right they must be the only shop in fethiye that sells stale bread no matter what time of day you go
