Will mix carrots & suzme yog! Just seems too good to be true. :)

Actually it is slightly more complicated.... You need to fry the carrot until soft in olive oil first, cool and then add the yogurt.
You could get really adventurous and add a bit of garlic just to prove to these buffoons that it's not necessarily just carrot and yogurt !

I have never fried my Carrots prior to adding it to Yogurt always found it to be a little sloppy after frying. I prefer the crunch and freshness. but then each to their own taste.
Also very nice as with a little mayo and teaspoon of olive oil whisked and fold into the yogurt.
(and for the really adventurous) olive oil, mayo, and tablespoon of Jack Daniels or Whisky whisk together til light and fluffy, fold in thick yogurt, and for a non drinker it is yummy.

We enjoyed a variation on carrot and yoghurt; it involves boiling potatoes and carrots as usual then mashing with mayonnaise not butter, season to taste then spread on a plates and cover with yoghurt. It makes for an excellent cold dish.

If you go to www.turkishcookbook.com and look for Haydari with Carrots (havuclu haydari). That's the recipe I have used on a number of occasions, she adds garlic and mint, a really nice variation. Phil

For those of you that don't know what a Cubanalle Pepper is, as mentioned in Phil's recipe link, they're the long ones that you see in the supermarkets and markets. They're either green or red and are a very mild, sweet variety of pepper.
