Can I not book direct with hotels

Try booking.com You can book with them and quite often pay in resort or cancel/change hotels without any charges. I've used them all over the world and as long as you make sure you book hotels that allow cancellations if that's what you might need to do then they are great. It's often a cheaper option to choose ones with no cancellation though - if it's what you require.
