This is a Mary Berry receipe which I am going to make today, but am going to use brioche instead of bread.
6/8 slices bread, well buttered and crusts removed
100 g (4 oz) dried fruit
grated rind of 1 lemon or orange
50 g (2oz) brown sugar (I use demarara)
1/2 pint (300 ml) milk
1 egg
Well butter a shallow 1 1/2 pint dish. Cut each slice of bread into 3 and arrange half the bread butter side down in the dish. Cover with most of the fruit, lemon or orange rind, half the sugar and then top with the remaining bread and butter - butter side up. Sprinkle with rest of sugar, rind and fruit. Blend the milk and egg and strain over the pudding, leave to stand for at least half and hour but it is better to leave for about 2 hours. Bake at 360F, 180C or gas 4 for 40 minutes or until puffy, pale golden brown and set firm. Serve at once. Serves 4.
