Leeks done in the same way as cauliflower cheese is so simple but amazing  :)

i worked in an RSPCC home when I was 17 and this was the first time I had leeks as a vegetable.  They had been given to a three year old child who has a lot of scabs from Impetigo.  Left the room for a minute and child had covered all his scabs with leeks..must have thought they were plasters :o

never had them as a veg since.  Ok for soup though
