Can u give us the microwave recipe? I prefer the lazy way and which butter would you use? I use the Bim butter with the striped label for my baking etc.?

Bim butter every time, seems to suit the english taste best and i have tried them all, Icim runs the next best I think.

Recipe:
1/2 a cup lemon juice
75g butter
1 and 1/4 cups sugar
2tsp lemon peel chopped fine
4 eggs

Put juice and butter in glass bowl or jug, microwave on high 1 and 1/2 mins.
Whisk in sugar and peel
Add eggs and whisk
Microwave high 7 minutes
whisk 1-2 minutes
Pour into hot dry jars, cover and refrigerate.
Should it not set you can microwave again for a couple of minutes, but I have never found it needed it.

Enjoy!
