homemade lemon squash

I just made some and was pleased with the result so thought to share the recipe I made up from some internet research.

10 good sized lemons
500mls or 2pts water
1kilo or 2lbs sugar
teaspoon of citric acid (limon tuzu)(optional) - I used it

Peel the zest off the lemons with a peeler (it needs to peel thinly not thickly) and place in a saucepan with the water, bring this to the boil and simmer for about 10mins.
Meanwhile squeeze the juice from the lemons, keeping all the pips and fleshy bits, throw away the remaining white pith.
Add the sugar to the peel and water in the pan and stir over the heat until all the sugar has melted, turn off the heat and add the juice and pips etc., leave to cool.
When fully cooled strain through a seive and put the squash mixture into clean bottles.
Use like any squash, inch or so in the bottom of the glass and top up with water.        
Delicious!

Don't yet know how long it keeps, but am hoping it will be a good few weeks in the fridge!
