Title: Getting it right
Post by: Highlander on October 13, 2015, 22:09:15 PM
Just a thought but I like everybody else I have bad days at work. I'm human (well nearly) and I do make mistakes.

So let's assume that a restaurant in Calis (not a specific restaurant) has 40 tables and they fill each table 12 times in an evening.

Taking the season as April 30 to October 31.

That's 102,240 covers.

I know we pay our hard earned pennies and are entitled to good service. But isn't it human nature to fail somewhere along the line.

The real question for me is how the restaurant deals with such human failings.

Fill each table 12 times a night? They'll fill our table once a night - we don't rush on holiday for anyone  :)

H, I don't think there's restaurant in the world that fills its tables 12 times a night. Unless, of course, you're talking about KFC, Burger King or Maccy D's but even they'd struggle.

The maximum would probably be 3 times but on average no more than 2 for a very busy establishment.

Ah!

Maybe 3 tables of 4 make the 12 that our Highland chum suggests?

Maybe but while the rugrats are still in school a lot of the tables will only have couples and very few are likely to have 4 seated at a session.

Mrs KKOB, who's an ex-restaurant manager, reckons that a 40 table restaurant in Calis would be doing well to serve 120 covers per night.

If they just had a big pile of covers though, and gave them out quickly...

KKOB - I am of course more than happy to bow to your good ladies' expertise but I thought I was working to the following well know formula...  ;)  ;)  ;)

We also need to factor in the number of restaurants on the front (and elsewhere).

The fact is we may all just be unlucky in receiving a bad meal and/or poor service.

40 tables, 3 times, 2 per table, 213 days = 240,213 (main course only)

40 tables, 2 times, 2 per table, 213 days = 160,213 (main courses only)

Assuming people don't really start to eat evening dinner till 6pm at the earliest, and most won't take orders after 10pm, that would mean each sitting would have to last less than 27 minutes  ;)

6pm - 10pm = 4 hours = 240 minutes divided by 3 changes = 80 minutes.

Also depends on the Nationality.  We have a Turkish friend and her husband who we met for breakfast on the Kordon.  We met at the Restaurant at 10.30am and were still there at 4.30pm.  We also met at the Yacht Classic at 8.00pm and left at 12.00pm, after the staff started to clear all the other tables (and still went on for drinks).   I have noted that Turkish people who eat out do spend a long time at their tables.  Not like us Brits...

Lets face it, not only is your maths slightly dodge, your knowledge of how restaurants operate is a bit wide of the mark - mibbe you should just give it up as a rant gone wrong...

May I ask what you did for 6 hours - presumably the breakfast didn't take that long.

Maybe so but I hope I made the point that it is simply not possible to get it right every single time   :)

And I don't consider it to be a rant - more an attempt to defend people who do their best to make my holiday enjoyable  :)

In my opinion the biggest single thing that many restaurants over there fail to be honest about is that the chef never came in today.

Scary.
