the ezme that is sold in the supermarkets is made with tomato salca.... and is not as nice as the 'real' stuff. (with chillie's in it is acili ezme). My favourite meze

1lb ripe tomatoes skinned seeded and finely chopped
1/4 cucumber peeled and finely chopped
1 Green pepper seeded and finely chopped
3 spring onions chopped
1 Clove garlic finely chopped
1/2 tablespoon fresh mint chopped
1 tablespoon tomato puree
Generous pinch of ground chilli(More or less to taste)Could substitute fresh chopped chillies
1/4teaspoon caster sugar
2 tablespoons olive oil( use the best you can get/afford)
1 tablespoons white wine vinegar

Place the tomatoes and cucumber in a colander, lightly sprinkle with salt and allow to drain for at least 30 minutes
Mix with the other vegetables and garlic until you have a coarse lumpy puree.
Stir in the remaining ingredients
Taste and adjust the seasoning, add green garnish to your choice
