No problems with Korkerec, especially from Izems cafe in Uzumlu. Great smothered in chilli sauce.

But not to sure about a dish featured on Ainsley Harriet's Istanbul street food programme this week
Raw lambs mince hand mixed with spices and served in a pocket of lettuce.
The only cooking the meat receives is that imparted during the hand mixing.

Anybody tried this ?

There used to be a place in Fethiye that did the raw kofta but with beef not lamb. It was delicious....

My old local kebab place in Istanbul did them with raw minced lamb, they had them on the menu as çiğ köfte - eaten them for years and never had an issue.  If you got a kebab delivered, they always put a portion in free of charge.  Any leftovers make a good breakfast sandwich the next day, fried with a dollop of their homemade tomato chilli sauce.  Serious hangover remedy, as in kill or cure!

A good chilli sauce provides heat, but not so much as to overpower the other components in a dish.   Sounds like you haven't tasted one yet...

Yes, in Europe it's called Steak Tartare.
