 :) Since the favourite food thread, I have been feeling like some bread pudding, has anyone got their own recipe for it thats a bit different, my mum used to put treacle in hers,  ;)

This is a Mary Berry receipe which I am going to make today, but am going to use brioche instead of bread.  

6/8 slices bread, well buttered and crusts removed
100 g (4 oz) dried fruit
grated rind of 1 lemon or orange
50 g (2oz) brown sugar (I use demarara)
1/2 pint (300 ml) milk
1 egg

Well butter a shallow 1 1/2 pint dish.  Cut each slice of bread into 3 and arrange half the bread butter side down in the dish.  Cover with most of the fruit, lemon or orange rind, half the sugar and then top with the remaining bread and butter - butter side up.  Sprinkle with rest of sugar, rind and fruit.  Blend the milk and egg and strain over the pudding, leave to stand for at least half and hour but it is better to leave for about 2 hours.  Bake at 360F, 180C or gas 4 for 40 minutes or until puffy, pale golden brown and set firm.  Serve at once.  Serves 4.

Cant find the recipe ,think the book is in Uzumlu ,but more or less same as above  but substitute some of milk for Bailys

Laffa,  can't put my hands on it at the moment, but my mother does the best bread pudding in the entire world - challenges accepted !!! -  I'll bribe her to part with it and post it when extracted !!! ;) :)

My Mum used to make a fab Bread Pudding  :) I'll ask her for the recipe when I take her meal over later.

I quite fancy a chunk myself now :D ;)

PS: Do you mean 'Bread Pudding' or 'Bread & Butter Pudding' Laffz [?] I just noticed that the (very nice  :)) recipes above don't have any spices in them, which my Mum's Bread Pudding does [?] ;)

 :)Hiy Cef, would be glad to have your mums recipe and method. there are so many different variations, some put numeg and some put cinamon, all sound yummy though. ;)

 :) Hang on to yer colesterol levels, this is definitely Not for the light hearted  :o

Use you own judgement with amounts, Mum's 83...... 8)

Bread (must be stale Not mouldy though :D)
Beef Dripping (Butchers Dripping, softened)
Currants & Sultanas
Mixed spice
Water

Soak bread thoroughly in water, leave to absorb.  
Squeeze water out of the bread, place in mixing bowl.
Add the softened dripping and mix with yer hands like a dough. Add in your fruit & mixed spice (heavy on the mixed spice  ;))

The mixture should ( :-\) look like a good rich fruit bread mix.  Spread into baking tray, cook on Gas mark 4/5 for approx 1 1/2 hours (depending on the size)  don't try & cook at a higher mark as the outside will burn & the centre will remain uncooked  8)

Anyone brave enough!! LOL :D 8) ;) I'm gonna give it a try this week, hope it turns out like my Mum's yummy  :)

PS: I was thinking about the sugar & just phoned my Mum to check, she said she sprinkles sugar over the top when it comes out of the oven after it's finished cooking  :)

Well I made the bread and butter pudding as per the receipe I posted earlier and it was yummy - there is a small amount left which I will eat cold tomorrow.  It makes enough for 4 but hubby didn't want any (good all the more for me).

 :)Me too Carlan, the only thing is the bread does'nt last long enough in ours to go stale, does anyone know if you could buy the big loaves on the whoopsy counter or does it have to be sliced bread, ;)

The bread doesn't have to be sliced, but if you slice it yourself don't cut doorsteps!!  I don't actually use bread I either make it with brioche (use a loaf not the rolls) or your can make it with Soreen, in which case do not put fruit in.

jefs recipe for bread pudding (as opposed to all the others for 'bread and butter pudding'),
is even nicer if you sprinkle it with sugar before baking.

Bread and butter pudding is lovely made with left over panettone too!

(i'm on the see food diet obviously!)

kwik tip - hot spoon stops treacle sticking so much, warming treacle gently makes it easier to pour.

Now tried & tested  :) (I live alone so I had to eat all of it  :o :-\)

1 loaf of fresh bread (sandwich type) leave to 'stale-up' 2/3 days
6 oz Currants & Sultanas
6 oz Dripping/Marg (softened) (I used Dripping)
1 egg (Beaten)
3 tea-spoons Mixed Spice
Fresh Nutmeg
Sugar
-------------------------
Break bread into small chunks, cover totally in cold water, leave to soak for a min of 1hr (overnight is best)

Squeeze excess water from bread (I used a sieve)
Add: fruit, mixed spices, freshly grated nutmeg - mix well
Add: Egg, Dripping (Marg) - mix well
Grease tins, add mixture (not too deep) mixture should be about 1/2ins deep
Gas mark 5/6
Cook for about 1 & 1/2 hrs (sorry don't know electric & timings depends on type of oven)
When cooked, sprinkle with sugar........enjoy, I did  :)

 :) Cef dont go there, I made one with my grandaughter on Friday night, I think its more of a wet nelly than a bread pudding, i'm the only one who has had a piece up to now, ;)

:D Why not Laffz, only myself to please  ;)  Did you 'squeeze' the water out of the bread thoroughly through a sieve? or are you just trying to keep it all to yourself :D ;)

Rosie10 dont like to disagree as everyone will tell you but what you are describing is bread and butter pudding nothing like bread pudding .

Ok Ok I know I'm late, talking of bread pudding, NOT bread and butter pudding but when I was a kid bread pudding included the contents of the cold tea pot - minus the tea leaves of course. Laffa you might remember this as I think it was a Liverpool thing.
