Calis boot fair this time of year usually has them ,i bought swede at the last one parsnips on the next one,or go to nif farm shop and buy them ,you can use from freezer for at least 4 months.

                     




They are definitely available and I have a massive one sitting in my veg drawer in the fridge to prove it.  All I now need to know is can I chop it up, blanch it for a few mins and freeze it and how long will it keep? I have never had frozen swede before.

Brian from Village Garden in Nif grows the swede. He's even trying rhubarb too now! I have his email address if anyone wants it.

lance, cut up your swede, blanch it for a couple of minutes in boiling water, put it straight into cold water, then drain it and when it's cooled bag it up and freeze it.

Just a quick tip.If you put a tablespoon of sugar in the cooking water instead of salt your sprouts taste like baby sprouts whatever their size. :)
