Post by: Toky on June 17, 2009, 20:24:06 PM
Does anyone know how to make this dish. It was served as a starter and as a little side dish with bread in several restaurants. when I was out in Calis. I loved it.

1/4 cucumber peeled and finely chopped
1 Green pepper seeded and finely chopped
3 spring onions chopped
1 Clove garlic finely chopped
1/2 tablespoon fresh mint chopped
1 tablespoon tomato puree
Generous pinch of ground chilli(More or less to taste)Could substitute fresh chopped chillies
1/4teaspoon caster sugar
2 tablespoons olive oil( use the best you can get/afford)
1 tablespoons white wine vinegar

Place the tomatoes and cucumber in a colander, lightly sprinkle with salt and allow to drain for at least 30 minutes
Mix with the other vegetables and garlic until you have a coarse lumpy puree.
Stir in the remaining ingredients
Taste and adjust the seasoning, add green garnish to your choice
