While I'm in Turkey I know that if I call a UK mobile with my UK mobile the call goes via the UK.

What happens if I call a Turkish mobile with my UK mobile, does that go via the UK as well?

It's treated by your UK provider as an international call, even if the number you're calling is 5mins down the road and the actual routing of the call will be done by whichever Turkish network you're on - its only data for billing that goes to the UK.
