Lemon or Lime Curd

Grated rind and juice of 4 lemons or you can use 5 limes.Warm them in the microwave for 30 seconds to give maximum juice.

4beaten eggs

125 grammes or 4 ounces of butter cut into small pieces
350 grammes or 12 ounces of caster sugar

Place all ingredients into a pyrex bowl and rest on top of a saucepan full of boiling water,not in it.Keep water boiling on a low heat and stir until sugar is dissolved but not boiling (about 20minutes) When the mixture coats the back of the spoon leave to cool and put in jars.

I had to learn how to make lemon curd very quickly when we moved here, as it's one of my eldest son's favourite foods and he was gutted we could not buy it here. I have to say the home made version is far superior to the bought stuff.

I had to as well for the same reason but I think it is sold here now.With lemons and limes growing about though it is one way of not wasting them. :D

Are there lime trees growing in this area now?  I've always bought limes in one of the bigger supermarkets but they're pricey.  Would be great to have my own lime tree!

Sorry, still no limes. One of the great mysteries to me. Does anyone know why we are swamped with citrus fruits but no limes?

Lime trees dont grow well in Turkey you have a round lemon tree .:D

Green unripened lemons work as well round the glass of a good gin and tonic,dont know about the lemon curd application though. cheers

Thanks for the recipe. Made it yesterday and it turned out fine (which for me is something). Could not get caster sugar so just used granulated which worked just the same.

Its the weather that make it hard to grow limes most of the limes in the world are grown in the caribbean ,they need a steady temperature not like  one that fluctuates like it does in Turkey. ;)
