It's done in a clay pot Toky and closed like a pressure cooker so it cooks in steam. Usually in a well in the floor or  oven. Nearest would be güveç. Meat cooks more tender. Not seen in Çaliş  pompeylee.

Vojo's used to do them.   The only place I know of now is the Kings Garden in Fethiye.  If you ring them they  will pick up an drop back for free.

Is it not Desti rather than testi?  That's how I know it. Clay pot where they break off the sealed neck of the pot and serve? Yummy rich casserole.  :P I had that in Hisaronu but not in Calis.

There are 2/3 places that do them along Calis prom, they used to have a clay pot outside restaurants but these days they are advertised on a board outside. I think Sunset restaurant at the front of Gunes Hotel have it and maybe Cafe Soul.
