They've either got to take the car out of Turkey with them, or will have to "surrender" it to customs while they're away. To leave the vehicle with customs will involve lots of paperwork, time and costs, of course.
The details of the vehicle are entered on 1 vehicle occupant's passport. Usually, but not always, it's entered on the passport of the person named as the keeper on the V5.

So that means they cant just go to kas and pop over to meis to get it stamped .

In theory yes they can. The downside being that they would have to take the car to Dalaman airport, leave it at the compound and collect when they return. Which to be honest is a bit of an arse ;)

I think you need to check your Turkish geography ! They won't be getting a ferry from Isparta to Greece. Izmir maybe ?
Ah well, if they're going to be in Didim then it'll be far easier for them. They could use the Bodrum to Kos ferry and take the car with them OR surrender it to customs while they're on Kos.
