Title: Same old questions about duty free.

As TC have decided to get antsy about weight for hand luggage can anyone tell me am I just as cheap buying duty free in Turkey??
That way they do not profit on the plane and I don't get charged for being over.

Duty free is in addition to your hand luggage so you shouldn't have a problem.  Dalaman Duty Free is not particularly cheap and there are restrictions on quantity - 1 litre spirits and 1 carton cigarettes per passport.

Did I not see somewhere they were weighing the hand luggage and charging if you were over?

We flew with Thomas Cook from Gatwick 3 weeks ago. They didn't weigh hand luggage. I have heard, anecdotally, that some check-in clerks will weigh hand luggage if you appear to be struggling with it or if it looks a bit big and heavy. Mind you, with some of the suitcases people take these days as "hand luggage", I'm not surprised.
