I remember years ago the wonderful Kartal cooking lamb in a hole in the ground for us.
It was just delicious. No need for a knife it simply fell of the bone.

eeww that's disgusting just looking at it makes me feel ill...
Dutchie, it takes about 40 - 50 minutes to cook depending on the weight of the chicken.
It is important not to let the fire get to big or cook for two long as the rice in the tin tray overcooks/burns on the edges of the tin.
During cooking the juices from the chicken run down into the rice which is first covered with water and topped with vegetables. The rice has a lovely smokey taste and I was surprised the skin on the chicken was crispy.
It really was delicious and moist :P :) :P

Afraid not Wendy :) but easy enough to try at home. We got a round tin quite a good thickness and had the spike with some prongs (cut down skewers) attached to it at one of the ironmongers - cost just 5TL

The shack on the beach at Kargi used to cook "chicken in a can"in a similar way with whole onions and jacket potato around the base,we thought the best chicken ever,served on the rustic type picnic table,they changed the table cloth every time."fresh sheet of white paper" not carved as might expect but broken apart.
Sadly when the beach was cleaned up last year the shack and the guy vanished.and was replaced by a formal tea shop.
