Title: Mushrooms bought from roadside vendors

What is the name of the mushrooms being sold at the roadside at the moment and how would you cook them?.
Does the presence of green mean anything?

They are Cintar (or Saffron Cap) mushrooms, very nice they are too. There are a couple of recipe ideas here....

We bought and cooked some a fortnight back.
Excellent fried with butter and slices of fresh garlic. They do take longer to cook than British mushrooms, but they are rather nice Al dente
We also casseroled some with chicken and were surprised that they maintained there shape after long cooking and were positively meaty.
We enjoyed them green bits and all
