Title: rediscovering liver
Post by: Ally B on July 22, 2015, 11:06:44 AM
When I was a young lad many many years ago I was coaxed ( forced) to eat liver. Why? " BECAUSE IT IS GOOD FOR YOU" After a bath in a tin bath in front of the fire on a Sunday night the dreaded nit comb appeared and my mother ploughed through my hair leaving furrows in my scalp and a tear in my eye. Why? "BECAUSE ITS GOOD FOR YOU"  Every morning before school I was made to have a soup spoon of sticky gooey horrible cod liver and malt Why?  "BECAUSE ITS GOOD FOR YOU"  I had Iodine dabbed onto cuts, grazes, and open wounds. Why?  " BECAUSE ITS GOOD FOR YOU" I'm sure my parents loved my but deep down I think they were closet sadists.   After marrying my wife 42 years ago my and livers path did not cross very often, that was until 4 years ago on a visit to Obens restaurant in Calis. We were sitting looking  at the menu   when the couple next to us were served their meal.I glanced over and what he had looked really good.  Being a nosy person I asked what he was having." Grilled calves liver he said ,would you like a taste" Well I had a piece and could not believe it was liver. This was not the grey twisted horrible thing I ate all these years ago. This was a nice brown colour crisp on the outside soft in the middle and oozing with flavour. Whatever they do in the kitchen to the liver it is spot on. Any one who likes liver should go there and if you dont, go and give it a try. Cant wait to go back and have some more.  Why? " BECAUSE ITS GOOD FOR ME"

That post made me laugh Ally  ;D

I too can remember the baths, nit comb, cod liver oil AND hating liver! Having also been married 42 years this year I can remember thinking 'that's it, I can cook what I want now'

After a long number of years I probably tried liver again and discovered it wasn't that bad so had it occasionally.  However, after trying it at various restaurants in Calis I can honestly say they know how to serve liver and onions.  OH always laughs when we're choosing what to eat as he knows that I'll have that a few times over the course of a couple of weeks whether as a starter or main course.  It's always delicious!

When we were over in June I had liver and onions as a main at Bambu, served with rice (of course) small portion of chips and fresh veg! Carrot, cauli and broccoli,  :D

Don't think I've tried it at Obens yet but will put it on my list for next time   ;)

Can't say I would eat the liver regardless how it is cooked  !!

I remember the tin bath placed by the open fire for my Sunday bath and the torn up newspaper for toilet paper. The old copper boiler was another memory and the excitement in the household when my dad bought my mum a spin dryer to replace the mangle  ???

I love liver and the best I have had is in Turkey- Ayden Pide and Gunisik do it particularly well but the best was a few years ago when there was a small restaurant opposite Scarlett which was only open one season I think and the head waiter was the double of Joe Cocker !

Yes, I know just who you mean Steve, can't remember his name but someone on here will.  Restaurant was called Sardunya. Their liver and onions was fabulous, the onions were served raw if I remember rightly and sliced very thin.  :D

Mmmmmmmm. Liver, onion, mash, gravy and peas/beans. This is without doubt one of my favourites, probably made more so by the fact that nobody in my family will eat it so it is saved for when a meal for one evening comes along.

Liver has always been one of my favourites and can honestly say i have never been disappointed when having it in Calis. In fact believe it is better than at home. Cod liver oil was always given to us every day at primary school from a small from a small plastic glass.Primary school also had the regular visit and head checks from the nit nurse. One thing i couldn't eat or bear the smell of when cooking was tripe which my father loved with onions

Loved Sardunya's liver and raw onions too, it was a favourite restaurant of ours and gone too soon.

Ceyhun was the owner, I can't recall a head waiter looking like Joe Cocker though  :)

I too love the liver in Turkey.  I really enjoy the Liver Kebab in Mozaik Bache in Fethiye and also the Liver and Onions main dish in the new Secret Garden Restaurant near Calis Sunday Market  8)

Hi marina..............each to their own I suppose.  I wouldn't expect a Yorkshire person to appreciate a gourmet delicacy like tripe!  Along with kidney, liver, heart, brawn, cowheel, pig's feet, ox tongue, oxtail and black puddings, we Lancastrians were brought up "proper" with the finer things of life!  Maybe we could start a CBF "War of the Roses" again? Apologies for drifting off topic.   ;D  ;D  ;D  : :)

Dennis,  I've been told all my life I should like tripe and all the others. Liver and kidneys, love them but not the others!

As for a war of the roses, split loyalties I'm afraid - dad born in Yorkshire, mum born in Lancashire!  Though being born in God's own county myself I would lean towards the white rose,   ;)

I respect the split loyalties situation, marina.  I was speaking a "load of tripe" anyway!  Cheers!    :)

I think most of us "oldies" were brought up eating pig's liver in the UK. In Turkey it's either beef or lamb liver both of which have a distinctly different texture and taste.

And all three are delicious. Haven't tried chicken livers except in pate.

Albanian style chicken liver
Chop 500g chicken liver into small cubes
Put in a freezer bag with
1tsp salt
1tsp pepper
6 tbsp plain flour
1tsp paprika
1/2 tsp chilli powder
 1/2 tsp cumin

Shake the bag, fry in hot olive oil

It's lush.

When my dad comes over we buy lambs hearts from the butcher by the fish market. Really tasty.
Can't bring myself to try tripe though.

I get mine from a Turkish supermarket in Brum but a lot of the Halal butchers sell them.

They are so much nicer than other livers, I buy a few kilo's and freeze them in portions.

A Turkish friend got me started on them, he said he lived on them when he did his

army service. In just a few minutes you've got a lovely meal.

I love chicken livers and will try your recipe Linda. Colwyn I've bought chicken livers in supermarkets to make pate or a starter salad. Ask your local butcher they will definitely have them.  :D

I love liver, onions, mashed potato and gravy, every time i order this in Turkey it is delicious. The best place so far has been Melodi bar, when it was in Fethiye. They did manage to do it again at their new bar at the far end of Koca Calis beach. Yummy.

I never used to like  liver either but love it now .. favourites are Anotolian Liver in Festival Hisaronu or the fried liver with crispy onions starter in Aubergines  Kalkan when Hubby had them and I tried them both and converted me .. I now regularly cook liver at home- cheap and delicious.

I am aged 88, and during the 30's my father worked in a lairage(abattoir) and part of his wages was the offal.Amongst the items he regularly brought home were, Sheeps heads, sweet breads, chicklings, lambs frys, ox liver, ox hearts, lambs hearts. Other offal like tripe and hodge were available, plus brawn and black puddings. All of which are extremely tasty when cooked properly. My mother  was a cook. For the past 8 years I have visited Calis I always have a couple of liver and onions, in different restaurants, and have always found them delicious.

I've got a standing order with my butcher for an ox heart every couple of weeks. The dog has it raw and I have it braised or finely sliced and stir-fried.

Made chicken liver last night following Kayakebab's recipe. Served it on raw sliced red onions as a starter. Excellent. Hilary bought an extra frozen box of the liver so I'll be making chicken liver pate next week.

I have NEVER liked liver. I don't remember when or why it was, but one night (perhaps after a few drinks) I tried it in Turkey. Now, sometimes, I get a craving for it. I don't know if they cook it differently here or if maybe my taste for food has changed, but I know what you mean.
