jars of bitter Melon in Calis market

Can anyone tell ne please what you are meant to do with the jars of bitter melon that is sold in the Calis market?the man has a laminate saying it helps with cholesterol and various other thingsl, he did a demo of rubbing it on his face but I had kinda thought it would be used for cooking with, if anyone can enlighten me I would be very grateful
