I used to update it myself and it is very scary - similar in tension to the old films where a man has a bomb, wire cutters and two wires - cut one, bomb is safe, cut the other, KABOOM!
Effectively what you need to do is update to the latest software in iTunes (or with a download you can obtain on the internet), the iPhone rejects it, then you jailbreak the phone back to it's former state but with newer software. If you know someone who is good with phones, the jailbreaking websites show you how to update, stage by stage.
Alternatively, if you take an O2 12 month contract, they will unlock your phone remotely.
