The purpose of a boat can be carried out on deck, the purpose of a ship gets carried out below decks
When turning a boat leans into the turn and a ship leans out of the turn

 :D

Hang on a submarine is a boat, not a lot done on deck there....

We have done 2 x 7 day trips on gulets and they did raise the sails on occasion

OK it was a bit limited as the boom was secured so the couldn't jibe (just like some of the day boats who sail for a stretch of the trip)  but still a nice peaceful leg of a journey

They will often put them up on days with no wind. They then motor astern and let guests take photoes from a dingy.

There is an annual gulet race in bodrum, they sail the course and are not allowed to use engines. It is held, I believe in October.
