We used to have Tripe boiled in milk with onions,Chitterling,(pigs intestines,)we used to boil a pigs head,pull all the meat
off,put it in a bowl with seasoning,put a plate on it with a weight and made Brawn,Brains on toast,
in fact thinking back we were a bunch of ####ing cannibals but we had to eat cheap.Anything leftover was mixed with
spuds and veg,coated in flour and fried as Rissoles.   Happy days.

I can see my old man with the pigs head making brawn .... he loved it, both the making and the eating.  We were less keen, but I'd slap it on bread if the dripping had run out mid week, from the sunday roast blend mmmmmmmmmmmmmmmmmmmmmmmm

Ah, memories are made of this.............tripe, pig's trotters, cowheel, brawn, black pudding, beef dripping.  Yates and Greer pork pies, UCP (queues on Fridays in Leigh at UCP).  Those were the days when men were men up North and you needed sustenance to face a week underground at the local pit.  Good jackbit!!  ;D
