To be honest, we used to get whole carcasses in Kaya. I butchered it, and fed it all to our dogs.

Its very like Human Flesh, my friend Hannibal has some good recipes, nice with Fava beans!

Seriously it isn't easy to cook but we used to hunt it in the marshes in South Iran and there are some
great things to do with it:-

1) Cure your own Ham, fantastic, very like Serrano if not better!
2) Cook slow and at a much lower temperature and leave most of the fat on (similar to Duck)
if roasting it, don't roast the leg like you would Pork, use the Loin or full Rib, and can take between
3 and 8 hours depending on size.
3) The legs if not making Ham (mmmmm!), braise for 8 - 10 Hours very, very slowly (140C)
4) If you are feeling adventurous use a Pernil (Caribbean slave food) recipe, heavenly if you can serve
it with Plantain chips and sweet potato with Gungo Peas and rice! if you can get an oven low enough,
put it in when you go to Bed, and have early Brunch on Sunday. (Riccan chef sites for recipes)

Forgot, you really need a meat thermometer if not used to cooking Boar,
it absolutely must be cooked through! Unless you like sitting down in
a small room for a day or two!

It probably sounds boring (!) JT49 but it seems that you made a pig of yourself in Iran  ;D  Not many of these roaming the streets of Leigh, just up the road from you so I'll stick to Turkey this year!  Cheers.
