Beef Dripping (Butchers Dripping, softened)
Currants & Sultanas
Mixed spice
Water
Soak bread thoroughly in water, leave to absorb.
Squeeze water out of the bread, place in mixing bowl.
Add the softened dripping and mix with yer hands like a dough. Add in your fruit & mixed spice (heavy on the mixed spice
)
The mixture should (
) look like a good rich fruit bread mix. Spread into baking tray, cook on Gas mark 4/5 for approx 1 1/2 hours (depending on the size) don't try & cook at a higher mark as the outside will burn & the centre will remain uncooked

PS: I was thinking about the sugar & just phoned my Mum to check, she said she sprinkles sugar over the top when it comes out of the oven after it's finished cooking
