Grated rind and juice of 4 lemons or you can use 5 limes.Warm them in the microwave for 30 seconds to give maximum juice.
4beaten eggs
125 grammes or 4 ounces of butter cut into small pieces
350 grammes or 12 ounces of caster sugar
Place all ingredients into a pyrex bowl and rest on top of a saucepan full of boiling water,not in it.Keep water boiling on a low heat and stir until sugar is dissolved but not boiling (about 20minutes) When the mixture coats the back of the spoon leave to cool and put in jars.
