Havent tried the meatballs yet janet, but thats on the menu for next week. the only thing i find hard is having to no what im eating tomorrow, but thats the only way I can keep myself on track, by planning my lunches and meals, but its all good! I made home made beef burgers the other night, they were delicious, I didnt have them in buns, just had some savory rice with them and it was yummy! i tried making the lemon merigune (spelt that wrong i know! lol) with that quark stuff and it was disgusting! luckily like you im not a major dessert person either x

Here's a couple of recipes from Slimming World for anyone who might be interested.

Perfect Free chips in no time!

you will need... Fry Light spray

Preheat the oven to 240°C/475°F/Gas 9. Peel the potatoes and slice lengthways into chips.
Bring a large saucepan of water to the boil. Add the chips and cook for 4 minutes. Drain and leave aside for 10 minutes to dry.
Return the chips to the dry saucepan, cover with a lid and shake to ‘'rough up'' the edges of the chips - this gives them the right texture.
Spray a metal baking tray with ‘Fry Light' spray. Transfer the chips to the tray, spray lightly with Fry Light and bake in the oven for 20-25 minutes, turning occasionally, until golden brown on all sides.

.............................................................
Chilli packed potato skins
Makes 4 servings
Free on Extra Easy
- add 6 Syns per serving if not using cheese as a Healthy Extra

What you'll need:
4 large jacket potatoes
454g/llb extra lean minced beef
1 onion, chopped
2 red chillies, chopped
2 cloves garlic, crushed
142ml/¼ pt beef stock, made with Bovril or stock cube
113g/4oz mushrooms, sliced
1 level tbsp tomato purée
400g tin chopped tomatoes
113g/4oz red kidney beans
168g/6oz reduced fat cheddar
To make the potato skins - Wrap the potatoes in foil and place in a moderate oven until soft in the middle. When the potatoes are ready, take them out of the foil and leave to cool for 10 minutes.  Slice in half and scoop out a good amount of the potato, leaving roughly a ½in/1cm thick layer. Place the potatoes back in the oven for 15-20 minutes to crisp up the skins.
To make the chilli - Dry fry the mince in a non-stick pan then drain to remove any excess fat and set aside. Place the onions in the pan along with the chilli, garlic and stock and cook for 5 minutes. Add the mince, mushrooms, tomato puree and chopped tomatoes. Simmer on a low heat for 45 minutes, add the kidney beans and simmer for a further 10 minutes.
To make the loaded skins - Fill the halved potatoes equally with the chilli mixture. Sprinkle with the cheese. Pop under a hot grill until the cheese is melted.
To serve - Serve the loaded potato skins with plenty of crunchy salad

Enjoy!!

Janet

For the Slimming World Peeps, I found this site a while ago, she has a range of recipe's - some good - some not so good, but gives some great ideas to adapt.  A read of the food diaries (dating back to 2007 to-date!) are quite amusing (especially the weekends and exercise regime).

14oz tin tomatoes
2 cloves crushed garlic
1+1/2 level tsp salt
