We are coming out in January and are wondering if the solar panels will provide adequate hot water supply or will we need to get a immersion heater installed?

If you're prepared to plan to shower around teatime on sunny days and boil a kettle for the dishes then you will manage without. I'd get one fitted anyway, you can get one with a timer in your fuse box. We used to set ours for an hour early morning and a half hour at teatime to top up for dish washing etc. You don't need it on all the time as you can just put it on before you go to bed ready for the next day, if it's been a bad day. The best thing about the timer is that even if you forget it's on at least it won't be on 24/7.
