What is the content of the horseshoe shaped salami type sausage
that we've seen hanging in supermarkets ? (Not pork obviously !)
Suitable for slicing up in a sausage casserole ??

Is usually chicken, sometimes beef or lamb, and several spices and colourings. It's roughly the equivalent of Spanish choizo. Keep trying different brands and you'll eventually fall on the one that suits your particular taste.
