Don't buy any "designer" perfume from street sellers or in the market. Same goes for tobbaco products.  Do not change money with a guy in Fethiye who has an estate agency opposite Migros.   
Do go to Kayakoy it is lovely there and some great restaurants.  Lots of restaurants around Calis you will be spoilt for choice.  Walk up from the water taxi away from the beach keep left and turn down the lane at the side of the Berlin Jewelers. Straight ahead is the old town square with the Guitar Bar, live Turkish music every night.  Straight ahead and at the very end is the Bedestan Hatay Ocakbasi. A small Turkish restaurant with meat cooked on an Ocakbasi.  Order a meal and you get a table full of little dishes with mezes, olives, salads, potatoes etc.,  Not a big menu, but very traditional and really cheap.
There is also the Yoruk Tents on the prom where you sit in a tent and get Turkish food and entertainment.

One more thing - my other half has asked;

He recalls reading about "The Highlands", a mountainous area above Fethiye, can anyone recommend a driving route to head up there or a suitable map and if so where can I buy said map?

Having stayed at The Mutlu,we had an enjoyable experience, however would suggest you request a quiet room high floor overlooking pool/garden. Disco bars on front can be noisy until late (5am)
Agree with lots of the earlier comments however on a personal basis Kayakoy is a must visit.
Also use the water taxi between Calis & Fethiye at least once the view up to the tombs and castle are worth it alone.
Lots of bars and restaurants in Passpatur (Fethiye Old Town) but we keep coming back, at least for the last 20 years that is,  to The Duckpond and Zeki's (Zeki is not always about but his wife, daughter & son Birol keep it very much a family location.
A little further out is Mozaic Bahce, opposite the PTT (Post Office) behind the Police Station.  If in doubt just ask.
Enjoy your visit I am sure it wont be your last!

Iskele restaurant, right in front of the half restored theatre has good food.Close to the front but bit of a strange location on the road the traffic has been re routed along, but the food makes up for the strange location! So near the pier where the Rhodes ferry is moored.
Anyone been to Pasha Kebab lately? Also a favourite but not been for a while.

We were wanting to go to a Hamam as soon as we arrive to cleanse our skin before we tan.

Any recommendations for somewhere in Calis? Near Hotel Mutlu?

I would suggest that is a long way round from the Mutlu to the Oykun  ;)
