Hi there...I'm a bit confused.
Are you asking CBF readers what you should have on your menu? I love authentic Thai but I would have thought it would make sense to serve the food that reflects your chef's skill set, really.
If you have Thai or Thai-trained chefs, then count me in, otherwise serve what you know and can excel at...that's what will bring in the punters (and no "heat and eat" please!).
